Here’s another summertime favorite. It’s refreshing, and the taste of lime just hits with Tostitos lime chips (if you love lime like I do). That’s all I have to say about it, it’s just delicious. It’s as good as it looks.
Ingredients
- ½ cup fresh lime juice
- 1 lb cooked medium shrimp, peeled and deveined, coarsely chopped
- ½ lb of bay scallops
- 1 medium cucumber, finely chopped
- ½ medium red onion, finely chopped
- 1 medium tomato, finely chopped (or 3/4 to 1 cup of diced tomatoes)
- 1 slightly ripe avocado, finely chopped
- 2-3 tbsp. of chopped fresh cilantro
- ¼ tsp. sea salt, season to taste
Instructions
- Combine lime juice, scallops and shrimp in a medium bowl; mix well.
- The bay scallops should be bite-sized already, but you may want to chop the shrimp into small segments before marinading with the lime juice and scallops. Sometimes I leave them whole however, personal choice!
- While that is marinating, mix together, cucumber, onion, avocado, tomato, cilantro and sea salt in a large bowl; mix well.
- Combine seafood mixture with veggie mixture.
- Serve ceviche with tortilla chips.
- Enjoy!
