Every time we have folks over, my spinach dip is always the first dish that gets demolished. I mean people scrap the bowl to get the last bit of this dip. I’m not one to brag, but that’s how good it is. I set aside a separate portion for my husband because he doesn’t want to miss out on his share of it, and I’m not mad at that.
Here’s how to make this dip in under 20 minutes.
Ingredients
- 1 box of frozen chopped spinach (10 oz.)
- 1 packet of Knorr’s Vegetable Mix
- 5-6 stalks of green onions, chopped
- 16 oz. of sour cream
- A few squirts of mayonnaise (no more than ¾ cup)
- 1 can (8 oz.) of diced water chestnuts
- Salt and pepper to taste (I like a bit of seasoning salt too)
Instructions
- Defrost or microwave the spinach for about 8 minutes until it’s completely soft.
- Drain and squeeze ALL of the excess water out of the spinach with paper towels.
- Put the spinach in a bowl with the Knorr seasoning packet, sour cream and mayonnaise. Add mayonnaise a little bit at a time in case you think you only need 1/4 or less (it’s really personal preference here – some ppl hate mayo!)
- Dice the green onions and water chestnuts and add to the mixture.
- Season to taste, and that’s it!
- I like Ritz Toasted Chips (veggie flavor) as a nice complement to the dip, but use whatever cracker or bread you prefer.
