Here we are at the last #mocktailmoment. It’s been a blast being a little virgin mixologist testing out drink options for you all. So fun, that I think I’ll bring this segment back occasionally, and sometimes with an added liquor (post-pregnancy of course).
Today’s drink is a modification of one of my favorite beach cocktails. This Virgin Cucumber Lime Mojito is refreshing and light for those who are not into heavy juice-based drinks. But if you’re not big on cucumber, that can be omitted from the recipe or try a muddled fruit like strawberries or raspberries instead.
Ingredients
- Lime juice
- Diet tonic water
- Cucumbers chunks
- Mint leaves
- Honey simple syrup (mix and heat one part honey and one part water on stove)
Instructions
- Muddle mint, cucumber and lime juice
- Mix in honey simple syrup
- Add together with diet tonic water and ice
- Stir and garnish with lime and cucumbers
