Cauliflower is having a good run in my house. It’s been a good substitute for mashed potatoes, rice and now pizza crust. There were plenty of complicated recipes on Pinterest, so after trying a few, I made my own recipe, simplifying the process into a few simple steps.
Ingredients
- 1 large head of cauliflower
- 1/2 cup shredded cheese (mozzarella or 4-cheese are my favs)
- 1 egg (beaten)
- salt (or seasoning salt) and pepper to taste
- Add any toppings you want on your pizza!
Instructions
- Preheat your oven to 400 degrees
- Chop the cauliflower head into bite-size florets
- Microwave the florets with a splash of water in the bowl for about five minutes. This is just to soften the florets a bit.
- If you have a high-quality food processor or chopper, grate them until they are a rice like consistency.
- My food processor is doesn’t grind cauliflower well, so I took the old school approach and used a sharp knife to dice and dice until I got the same rice-like consistency.
- Put the cauliflower rice in a bowl, and get rid of any excess water or moisture by squeezing the mixture with clean paper towels. It may take 2-3 towels to get the remove as much moisture as possible.
- Add the cheese, beaten egg and seasonings to the cauliflower.
- Use your hands to mix everything together to form the pizza dough. On a parchment lined baking sheet or pizza pan, press the dough down into an even circle. The diameter should be around 9 inches.
- Bake for 25 minutes, or until the edges are golden, then remove from oven.
- Add the toppings and bake for an additional 10 minutes. I added shrimp, roasted red peppers and mushrooms.
