Everybody in my (picky) family loves this chicken dish. The secret is in the sauce – it’s so creamy that you will want to lick your plate. It feels more special than your average chicken dinner during a weekday meal, so give it a try and see how impressed your family or friend crew will be. Seriously the buttery cream, mushroom garlic mix with the crispy tender chicken thigh is sure to please everyone.
Note: I’ve been experimenting with the rosemary, thyme and oregano from my little outdoor garden. The fresh herbs definitely add to the flavor, but feel free to nix them or add other seasonings to the mix if those aren’t available to you….I think the cream mushroom sauce makes this dish a hit anyways.
Ingredients
Chicken
- 4 – 6 chicken thighs
- 1 tablespoon of vegetable oil
- Dashes of salt, pepper and seasoning salt
Mushroom garlic sauce
- 1 tablespoon of vegetable oil
- 2 cups of mushroom
- 1 cup of heavy cream
- Sprigs of thyme, rosemary and oregano
- 2 garlic cloves
Instructions
- Preheat oven to 350 F.
- Season both sides of chicken thighs with salt, pepper and seasoning salt.
- Heat vegetable oil on medium-high heat in a large skillet. Add chicken thighs skin-side down. Cook for about 5 minutes, on the skin side until nicely browned.
- Transfer chicken thighs, skin side up, to the foil-lined baking sheet and bake at 350 F for about 20 minutes or until chicken thighs are completely cooked through and no longer pink in the center.
- While the chicken is cooking, make the mushrooms sauce: heat vegetable oil in a large skillet on medium heat. Add sliced mushrooms and cook on medium heat for about 3 minutes.
- Add heavy creamy, dash of salt and fresh thyme, rosemary, oregano and garlic. Bring to boil, stirring frequently, and then immediately reduce to simmer on low.
- When chicken is done baking, it will be crispy and delicious as is!
- But to add the sauce, add cooked chicken thighs to the skillet and spoon the sauce and the mushrooms on top of chicken thighs. Flip chicken thighs a few times to make sure they are fully coated.
And that’s it! Plate with your selected side dishes and it’s ready to serve.
